School is just around the corner, but there's still plenty of summer days left for picnics, potlucks, and dinners on the porch with friends and family. This Greek Tortellini salad, true to its name, features tender, cheesy tortellini, which will go easy on sore mouths. The accompanying veggies, when diced into tiny pieces, will give your family some fresh nutrients while preserving those brackets. Enjoy!
Once made this dish will last up to 3 days in the fridge making it the perfect lunch dish!
Serves: 10 servings
• 1 lb fresh cheese tortellini
• 1½ cups grape tomatoes, sliced
• 1½ cups cucumbers, diced
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• 4 oz crumbled feta cheese
• ⅓ cup red onion, chopped
• ⅓ cup black or Kalamata olives
• 1 cup Greek salad dressing (or to taste)
1. Cook pasta according to package directions and run under cold water.
2. Combine all remaining ingredients in a large bowl.
3. Refrigerate at least 2 hours before serving.
